From Bai Tu Long Bay to Bristol - The Saigon Kitchen
Raised near Bai Tu Long Bay in Vietnam, Trung grew up understanding that great food starts at the morning market - fresh, seasonal, and nothing wasted. That philosophy carried him through years of sharing Vietnamese culinary culture with the world as a guide, fixer, and storyteller, before bringing him to Bristol, where he opened The Saigon Kitchen in 2022.
Cooking the way he was taught as a child, Trung's food is built on fresh herbs, light broths, and gentle methods rooted in the Vietnamese belief that meals should nourish body and soul. Herbs are never a garnish here - they're central to everything, reflecting a Five Elements philosophy that balances taste, temperature, and the senses.
In 2025, The Saigon Kitchen grew into a full cultural experience - cooking classes, a teaching herb garden, and supper clubs celebrating Vietnam's regional cuisines. A small piece of Vietnam, right here in Bristol.
